Meet Lijo, our head chef and the founder of Fermentation Stories. Lijo’s love affair with food began in childhood and his passion for the culinary arts led him to graduate from Mangalore University. He then honed his skills by working in various hotels and restaurants before setting out on his journey as a restaurateur with the opening of Cafe Agape in Chikmagalur.

Lijo’s interest in sourdough and fermentation inspired the genesis of Fermentation Stories. He believes that using traditional methods to make the dough and allowing it to ferment naturally results in a more flavorful and wholesome crust. At Fermentation Stories, we strive to bring to the table food filled with love and stories, all handmade by Lijo himself.

Lijo is a stickler for using the freshest ingredients and loves sourcing local produce. With his keen eye for quality and his dedication to making the perfect pizza, you can be sure that every pizza that comes out of our kitchen is crafted with flavor and passion. At Fermentation Stories, we are more than just a pizza cafe. Meet Jaison, our head Barista who manages our coffee menu. Despite graduating in computer science, Jaison discovered his passion for coffee and has since trained himself in various processing, roasting, and brewing techniques. He is a self-made coffee enthusiast and is passionate about introducing our
customers to our farm-to-cup concept. In an attempt to source our coffee beans directly from local farmers and roast them in-house, this ensures maximum freshness and a unique coffee experience.

Together, they bring their passion for food and drink to every aspect of Fermentation Stories. With Lijo’s expertise in pizza making and Jaison’s skill in coffee, our team at Fermentation Stories strives to provide a memorable culinary experience for our customers.
